- 2 oz. Belle Isle Strawberry Matcha
- ¼ oz. simple syrup
- ½ oz. lime juice
- club soda, to top
- 3-4 mint sprigs
Take 2-3 mint springs (leave one for a garnish) and smack them between your hands, then add to your Collins glass and top with ice. Set aside.
Add Belle Isle, simple syrup, lime juice and ice to a shaker. Lightly shake, then strain into your Collins glass over the smacked mint and fresh ice.
Top with club soda, stir lightly, then garnish with your last mint sprig and a lime wheel.
